This is one of my favourite pancake recipes. It has only 3 ingredients and is gluten free! However if you don't like bananas this recipe is probably not for you.

This is one of my favourite pancake recipes. It has only 3 ingredients and is gluten free! However if you don't like bananas this recipe is probably not for you...

Ingredients:

  • 1 banana
  • 1 egg
  • 20g oat flour (GF)

Recipe:

  1. Mash the banana in a bowl then add your egg and flour and mix all together.  If you don't have oat flour you can blend up some porridge oats.

  2. Heat up your pan to a medium/high heat.

  3. Add a little bit of coconut oil or butter to the pan and let it melt.

  4. Finally add your mixture to the pan . I normally make 3 medium size pancakes.  Once you see some bubbles on the top of your pancake that's when you should flip it.

You can add different flavours to these pancakes and toppings.

I like to add in some cocoa to make them chocolatey or some cinnamon.

I also like to top them with fruit, yogurt and sometimes some nuts.

I have these pancakes at least twice a week for breakfast as they are so easy to make and you can be diverse with them and make them different each time.

I hope your taste buds find these as yummy as mine does!
